yummy recipe!

I got this recipe from I made these for Taylor so he could grab them in the mornings on his way to school/work. He loved them despite his nervousness about all the "healthy stuff" in them. I also added choc. chips and coconut to them. :)

Breakfast Cookies
Two cookies and a glass of milk for an energy filled, quick breakfast!

2 c. old fashioned oats
1 ¼ cups whole wheat flour
1 c. all purpose flour
1 c. Grape-Nuts cereal
½ c. wheat germ
½ c. oat bran
2 tsp. baking soda
1 c. butter, room temperature- I use 1/2 butter and 1/2 olive oil
1 c. peanut butter
2 lg. eggs
1 c. packed brown sugar
½ c. white sugar
1 T. vanilla
1 c. almonds, toasted and coarsely chopped
1 c. raisins
1 c. chopped pitted dates

Mix all dry ingredients in a large bowl to blend. Using electric mixer in another bowl, beat butter and peanut butter until creamy. Add eggs, both sugars and vanilla. Beat until smooth. Add cereal mixture; stir until blended. Mix in almonds, raisins, and dates.

Line baking sheets with parchment paper. Using 2 ounce ice cream scoop or ¼ c. measuring cup, scoop dough onto prepared baking sheets, spacing mounds 2 inches apart. Using the bottom of a glass, press cookies to ½ inch-thick rounds.

Bake cookies at 350 degrees for about 15 minutes. Let cool on sheets for about 10 minutes before removing.

mmmm! I LOVE these :) I'm wishing we were still in Provo so I could come hang out with you and Brynne... Joe started school today, so my daytime buddy is gone :( Hope you guys are doing great!
